Candied Citrus Slices
2 citrus fruits of your choice ( lemon, oranges, etc ) thinly sliced
1/2 a citrus fruit juiced
1 cup filtered water
2 cups white sugar
1 pot of boiling water
1 large bowl of ice water
Boil your fruit slices in water for one minute, do not go over the minute mark, immediately add fruit slices to the ice bath and shock.
Meanwhile in a large deep skillet combine the 1 cup filtered water and the 2 cups white sugar, bring to a simmer .
Add your fruit slices to the skillet and simmer , NOT BOIL for 90 minutes, you’ll need to watch over it carefully and flip the fruit slices every 15 minutes.
Once the fruit is done simmering transfer the candied fruit onto a wire rack to set. I suggest putting a cookie sheet with foil or parchment paper under the rack to avoid a mess.
Can eat alone, add to pies or cakes for decoration and my personal favorite, cocktails !
