Corn Fritters



2 ears of corn

2 large jalapenos

2 eggs

1/3 cup whole milk

1-2 chopped scallions

1/4 cup all purpose flour

1/3 cup corn meal

1/4 TSP smoked paprika

3 TBS chopped cilantro

Salt and pepper to taste

Oil for frying patties

Some olive oil or grape seed oil for roasting ( you can roast on a grill as well if you don’t want to use a stove )


Roast your corn and jalapenos, you can put a bit of oil in a pan and roast them up in a skillet , or toss them on the grill , just be sure to oil your veggies before hand.


Once roasted deseed your jalapenos and dice up

Cut your corn off the cob

Combine corn, jalapenos, scallions and cilantro

In a separate bowl combine milk and eggs

Combine dry ingredients together

Add the wet ingredients to the veggies and toss

Add your dry mixture and combine well


In a skillet put a bit of oil and heat up, not a lot, just enough to coat the bottom of the pan , add the batter and fry up, you WILL NEED TO USE A FRY COVER , the kernels will pop occasionally and this can cause burns, don’t use a sauce pan lid , as condensation will occur and the water will drip into the hot oil, a mesh fry lid will do.

Use caution when frying.


Fry on both sides


Drain on a paper towel and serve with honey ( We use honey with hot sauce added to it )
